2 tablespoons of brown sugar

Steps to Make Colada Coffee

Prepare the Coffee
Making coffee with a Moka Pot: Fill the bottom chamber of your moka pot with water up to below the pressure relief valve. Place the finely ground coffee in a filter basket, and level off without compacting it. Use the Moka pot, put it on medium heat.
Espresso Machine: Fill the portafilter with ground coffee, level it off by brushing off the excess, tamp down lightly and lock into machine. Prepare the espresso as usual
Make the Espumita (Foam)
In a small mixing bow, add brown sugar while the coffee is brewing.
When the first few drops of coffee start to come out, gather about 1 tablespoon of this coffee, and add it to the sugar.
Whisk the mixture well with a spoon until it is frothy and light paste Espumita—the foam that gives colada its distinctive, silken body— is the lifeblood of the drink and this one has it too.
Combine and Serve
Slowly pour the coffee into a bowl with espumita, combining everything with slow cruurcular movements. This leads to a sweet, foamy layer on top of your coffee.
Pour finished coladas into espresso cups or shot glasses. Colada coffee is normally poured in small cups when served.
